3 Easy Fall Snacks

Fall is a time for making memories and enjoying the chilly weather with friends. Some embrace all that fall has to offer like, pumpkin patches, spooky tours, and fall fairs. Others really enjoy the typical fall food/snacks. In this blog, I am going to share with you my top three favorite quick and easy snacks to make during this season.
1. Pumpkin Seeds
As someone who loves the yearly tradition of carving pumpkins, I am always in need of a good pumpkin seeds recipe.
Ingredients: Pumpkin Seeds, olive oil, salt, pepper, paprika, Lawry’s seasoning salt
Steps:
Preheat oven to 350 degrees.
Separate “pumpkin guts” from the seeds and wash them.
Lay them out to dry and pat dry them with a paper towel.
Mix on a baking sheet, olive oil, salt, pepper, paprika, Lawry’s seasoning salt.
Cook for 30 minutes.
2. Halloween - Reese’s Snack Mix
Prep Time: 5 minutes
Ingredients: Pretzels, Peanuts, Chocolate, and Peanut Butter Chips, Mini Reese’s Peanut Butter Cups, and Reese’s Pieces.
Steps: Pour out all the ingredients into a bowl and mix them together! You can put in as much as you want or as little as you want.
3. Pumpkin Muffins
Prep Time: 30 minutes
Ingredients: 1.5 cups whole wheat flour
1/2 cup vanilla protein powder
1.5 tablespoon pumpkin pie spice
1/2 tsp baking soda
1/2 tsp salt
15oz canned pumpkin
1/2 cup milk
1/2 cup Greek yogurt
1/4 cup avocado oil
1/2 cup honey
1 tsp vanilla extract
Steps:
Preheat the oven to 350 degrees Fahrenheit.
Add the dry ingredients in a bowl: whole wheat flour, protein powder, pumpkin pie spice, baking soda, and salt, and mix well.
In a separate add the remaining wet ingredients: milk, canned pumpkin, Greek yogurt, avocado oil, honey, and vanilla extract and mix well. (Create a well to add in wet ingredients)
Fill muffin tins bake for 20-23 minutes or until a knife comes out clean.
